The effect of temperature on glucose isomerase production. Enzyme activity was increased along with an elevation of temperature from 33°C to 37°C (). When the temperature increased over optimal temperature (39°C–43°C), the enzyme activity dramatically decreased from 0.238 ± 0.001 to 0.206 ± 0.020 U/mg biomass (). From these data, we chose 37°C as the optimal temperature for glucose isomerase production. a, b, c, d, and e indicate the significant difference between groups.
